Our Nicaragua comes from smallholder farmers in Molino Norte, in the Matagalpa region — a high-altitude, clay-mineral-soil area that produces dense, complex beans without the polarizing brightness of an Ethiopian or the polarizing boldness of a Sumatra. The varietals — Yellow and Red Catuai, Catimor, and Parainema — are fully washed, fermented 12–14 hours, then dried on patios and raised beds.
This medium roast brings out the cup's softer side: cocoa through the middle, light floral and citrus tones around the edges, a balanced body that drinks easy any time of day. It's a "first single origin" recommendation for someone moving up from blends.
Coffee Details
Brewing: Pour-over makes the floral-citrus tones sing. Drip works well for everyday drinking. French press rounds out the body.
